Fall Eats: Meals You Should Be Making This Season

It's the best time of year! It's getting cooler outside, the leaves are turning and you don't have to fight someone at Fred Meyer for the last can of pumpkin puree! 

I am all about making my apartment smell like the best of Autumn, (yes, I am a huge fan of the A word) and I don't just mean with apple orchard scented candles, but with food! There are so many delicious seasonal recipes out there I decided to share a few of my favorites with you :)

The problem with pumpkin spice

My ultimate favorite fall meal came from a Rachael Ray cookbook (gifted to me years ago) and I like to call it, My Ex's Last Supper. It was the last meal I made for him before we parted ways permanently and probably one of the most memorable things about that relationship. I kid, I kid! Kind of. Anyway, the most time-consuming part of this meal was cutting up the sugar pumpkin, but it was so worth it! I would eat this meal for the full month of October If I could without gaining a million pounds, trust me.

Have you ever made Pumpkin chili? The boss lady passed this recipe along and it is solid! It has just enough pumpkin flavor to satisfy the basic tastebuds, but not overpowering. It also has a good kick to it if you like your chili to be a little spicy. 

You can make it colorful and top it off with scallions or slices of avocado and a touch of sour cream. :)

Another one of my new favorite fall meals is stuffed acorn squash. After it was all done, the sausage filling tasted like my mom's Thanksgiving stuffing, no joke! It's SO yummy and can be a solid leftover for the week.

It's pretty easy to make too. I topped it off with parmesan, but use whatever tickles your fancy! Find the recipe, here.

I LOVE me some pumpkin spice scones and pastries but wanted to try a semi-healthier option so I made pumpkin spice protein muffins instead.

I brought a couple in for Gregr and Manley to try and this is what they had to say: 

"We are living in a pumpkin spice world, and I am a pumpkin spice girl. The muffin was good, a little dry, but that's probably because it was healthy. Making something healthy always decreases yums by 10%"  - Manley

The protein powder does make them a little dry, but you can always put in a little extra pumpkin puree. I added dried cranberries because they are my favorite, but raisins or walnuts are other yummy options :) Try them out here next time you're in the baking mood!
